Sprinkled

I went to sleep lastnight knowing that something just wasn’t right. My throat was a little itchy and my chest was a wee bit tighter than usual…but I played it off as just being out in the cold lastnight when I went to Panera. Nope, wrong. Woke up this morning wanting to immediately rip a hole in my neck and pull my throat and most of my innerds out. Gross, but totally true and definitely unappetizing, making breakfast a little hard to stomach, but I did. Luckily when I get sick I rarely lose my appetite. Or maybe I just love food.

Anyway, being sick – in my opinion – is the perfect excuse to sit on my bumdiggity all day. You bet I did, too. In between experimenting more with my almond flour and frequent trips to empty my hot-tea infused bladder, I was smack-dab on my booty. I also made a new bestfriend. Meet Tylenol – and as I tweeted earlier…I’m 21 years old and had SUCH difficulty getting that damn child lock off of it to open it. I rule.

Mmmm tasty. Except not.

So, enough grossing ya’ll out, let’s talk almond flour. I found a sweet recipe for almond flour SUGAR COOKIES! What a perfect recipe for the holidays, right? I adapted the recipe a bit for the ingredients I had on hand and I’m so pleased to say that they turned out perfectly. Also, no worries, I washed my hands frequently and didn’t get any germies on the cookies. I’ll be devouring them all anyway, most likely, so it’s not like it matters. Read on!

Almond Flour Sugar Cookies

Ingredients:

1 1/4 cup almond flour

1 cup sugar

1/4 cup powdered sugar

1 egg

1/4 cup butter or sub

1 tsp vanilla

Sprinkles for decorating (the best part!)

Directions:

Preheat oven to 350 degrees and line/grease baking pan

Combine dry ingredients and beat together wet

Combine wet + dry ingredients and plop em’ on your baking pan

Sprinkle them with sprinkles BEFORE baking! I used holiday sprinkles, so festive!

Bake for 8-10 mins or until LIGHTLY browned. Don’t burn them, or your kitchen!

Let cool on a cooling rack and devour! 🙂

  1. feel better!!! I should be studying but reading this post hahaha you evill person. I just got mario party 8 for wii, so to say i never played mario party never had n64 only playstation. I have a feeling I will be addicted over break and will force my dad to play. Take a nice bubble bath ❤

  13. Oh my goodness…. who knew there were so many types of flour!?! Those cookies look awesome… with some icing on top, I’m sure they’d be even better. My favorite kind of cookie is Ginger Molasses, YUM!

    I hope you feel better. My home remedy is a hot shower with lots of antibacterial soap, clean pjs, clean sheets, nyquil and lots of tea. Also Vitamin C drops!

  14. I love all kinds of cookies, I guess I’m kind of a cookie monster, lol. As for how I try to get better, that is hard I really don’t like to act sick so I do what always do and hope the sickness will go away, also I try and get extra sleep and stay hydrated.

  23. Feel better soon, chica! I’m just like you – I RARELY lose my appetite, even when I’m sick. No matter how sick I feel, my stomach is almost always functioning properly haha.

    Your sugar cookies look ah-mazing (love those colorful sprinkles 🙂 )
    I’d say my faves have to be…these mint chocolate chip cookies with colorful sprinkles my aunt makes every Christmas (I’m going to try to post the recipe soon!) But monster cookies and a good ‘ol, chewy and soft chocolate chip never fail me either 😉
