40 bucks for a recipe, anyone?

Has it really been a week since I last posted?! Sorry about that.

Ya’ll can scroll down to the bottom if you want for a special surprise featuring CSN Stores.

Csn Stores has SO many awesome things to check out – everything from fitness items to lighting! Personally, I’d use it for a resistance band 😉 or a cute lamp! Check out all they have to offer!

 I am incredibly excited that summer is so close; one more week. One more week until I have free time to spend with my family, friends and my kitchen.

I really want to try a lot of recipes now that I’ll have time to 😀

 Speaking of – I’ve gotten a head start with Janetha’s Coffee Cake! I just subbed banana in for the apples, used gluten free flour instead of WW, and regular brown sugar in place of Splenda (just cause I didn’t have any on hand)

I took a much needed break from working on final projects/studying and whipped it up:

Whip it guuuud.

Add some banana + almonds (p.s. I also didn’t have slivered almonds…but whole ones worked)

25 minutes at 350 and voilaa!

This week I’ve also been whipping up plenty of these thangs – quick, easy and awesome:

Crunchy Kimchi Omelette

1 egg + 2 egg whites

1/4 cup Kimchi

1/3 cup cherry tomatoes, sliced in half

2 slices cheese…sliced again

Whatever else you wanna add! I recommend spinach 😉

I won’t bore you with “instructions” because I’m pretty sure it’s kind of obvious how to grease a pan and pour the ingredients on + flip 😉

If you’ve never tried kimchi before, I suggest you do! It’s awesome. You can find it at Whole Foods and at plenty of Asian grocers!

Have you ever had kimchi?

Earlier this morning while I was studying blog surfing and enjoying my breakfast, I got a question on my formspring that really kind of opened my eyes.

“Are your parents separated? You tend to speak a lot of your father, but not of your mother. Sorry if this is a sensitive subect.”

Not a sore subject at all, but still kind of made me feel as if I don’t “appreciate” my Mom on here, or mention her enough. Mother’s day is tomorrow, and I plan on spending the day with her, of course 🙂 My Mom and I are two totally different people. Sure, I’ve inherited so much from her, and some of my traits are definitely similar to hers, but my Dad and I have always been a little closer. Why? You know, I’m not really sure. I’m totally a Daddy’s girl, and will whole-heartedly admit that at 20 years old. Growing up, I always gravitated towards him, and I felt as if we got to spend more time together. My Mom worked a lot, and to be honest, sometimes I feel as if that made us distant at a time. I adore my Mom to pieces and I know she’s worked so hard to be the best mother she can, and she totally rocks. She is an AMAZING person, and she has the ability to brighten anyone’s day by just simply walking in the room. She has been through so much, and deserves so much love. She survived a stroke 2 summers ago and is one of the strongest and most determined women I’ve ever come across in my life. She’s absolutely beautiful. I don’t play favorites, I know God wouldn’t want that and neither do I. Just to clear things up, I love both of my parents a ridiculous amount and I am incredibly blessed to have them in my life – without them I would not know who I am, nor would I be the person I’ve developed into today. My parents are married, but they are seperated – it’s pretty confusing – but as I said on my formspring – I’m over it! They can do whatever they please, as long as they’re happy. Yes, they still hang out and get along. I do certainly believe God has a place for them to eventually be together again. They are wonderful people.

 I’ve also gotta a few Q’s about this breakfast that I have most days of the week because I love it.

 Berry Patch Protein Oats

1/2 cup oats

3/4 cup frozen berries

1 scoop vanilla whey protein powder

water/almond milk

+ top with Justin’s Honey Almond Butter for best results 😉

    Recipe? Try risotto, one of my favorite dishes! With mushrooms, pumpkin/butternut, or whatever ingredients you like. There’s also a few recipes on my blog for it:)

  14. Shame on me! I just assumed something was “different” when I saw you post more about your dad than your mom (although I’d never use formspring to ask haha). But I guess that’s because I usually write more about my dad, too, since I live with him. My parents are married and happy, yet they currently live in two different states. It’s not a “separation” in the traditional sense, more like a decision to try new things? I have no idea either. 😛 You’re not alone on that.

(g-free)…i’m not very creative with this can you have bulgur? if not then a type of rice/oat/quinoa based dish but more savory, with sweet red pepper and onions…the one i’m thinking of is bulgur with red onions and sweet red peppers mixed and its good! hope you have an amazing day with your mommy, love xoxox

    Sweet Potato Latkes

    You’ll need:

    1 lb. sweet potatoes (for me- this was two large sweet potatoes)
    1/2 cup sorghum flour (or unsweetened gluten-free baking mix or pancake mix)
    1/4 teaspoon xanthan gum
    1/2 teaspoon baking soda
    1/2 teaspoon sea salt
    1 teaspoon cumin
    1 teaspoon curry or use ginger if you prefer
    1/2 teaspoon red or black pepper, to taste
    1/4 cup sweet potato puree
    1/3 to 1/2 cup unsweetened non-dairy milk, as needed
    2 teaspoons raw agave nectar or honey
    Light olive oil, for frying

    Peel and grate the sweet potatoes. Set aside.

    In a large bowl combine the sorghum flour, xanthan gum, baking soda, sea salt, cumin, curry or ginger, pepper. Whisk to mix.

    Add in the sweet potato puree, non-dairy milk, agave and stir; add a little more liquid if you need to, to create a thick but smooth batter.

    Add in the grated sweet poatoes, and stir to combine.

    Using a deep sided heavy skillet (I used a large cast iron skillet) heat about 1/4 inch light olive oil over medium-high heat.

    When the oil is hot drop the latke batter by spoonfuls into the hot oil, cooking by batches. Fry on both sides till golden and crispy; flatten a bit with a spatula.

    Drain on paper towels. Keep warm if not eating right away- but latkes freshly fried from the skillet are so delectable.

    Makes 16 3-inch latkes.

    hey Meg! im not sure if its fair for me to enter this, so i would totally understand if you deleted this! but i just wanted to share something that i didn’t know was uncommon until my mom told me it was (speaking of mammas’, yours so wonderful!) is putting a hard boiled egg or two on your pasta with marinara! i guess its an italian thing?? its so simple but sooo good at the same time!
